Healthy Strawberry Crumble

This delicious dessert tastes like a combination of pie and cookie bars! These crumble bars have a soft sugar cookie crust, sweet berry filling, and oat streusel topping. They’re perfect for the Valentine’s Day, Mother’s Day… or just any day you’re craving something sweet and fruity! Leftovers will keep for at least five days (if not longer!) if stored in an airtight container in the refrigerator. Makes 16.

INGREDIENTS
for the topping:
1/2 cup instant oats (gluten-free if necessary and measured correctly*)
2 tbsp white whole wheat flour or gluten-free flour
1 tsp ground cinnamon
4 tsp pure maple syrup, room temperature
2 tsp coconut oil or unsalted butter, melted

for the filling:
1 pound fresh whole Red Blossom strawberries, diced
1 ½ tbsp cornstarch

for the crust:
1 1/4 cups white whole wheat flour or gluten-free flour
1/4 tsp baking powder
1/4 tsp salt
1 1/2 tbsp coconut oil or unsalted butter, melted
3 tbsp unsweetened cashew milk, room temperature
1 tsp almond extract
1 1/2 tsp liquid stevia
2 tbsp pure maple syrup
